Okay. This is NOT bibimguksu. Not even close to other "fusion" versions that are in LA. Just a tip, you should cook noodles as the very last step. Even a cold water bath will not save its texture because it will still absorb water. The guksu (noodles) needs to be chewy, not mushy.
I guess I can modified the last one with any meet like smoked salmon, chicken or shrimp? Love all the recipes, especially because is getting warm here in California. Thanks great Job!!
The first recipe reminds me too much of the Vietnamese bun thit nuong (although the last recipe is also similar). But I think I'll stick to bun thit nuong since the Vietnamese are masters at combining veggies and herbs to their noodle bowls. And one can never get enough fish dipping sauce to drown everything in. Hahaha! Poke is good for a few bites, but then it's too much for me. I prefer sushi as I can eat that by the boat load. 🙂
