Thanks for sharing, though I wish you had included printable versions of the recipes. In my experience (not so much because after a few tries I gave up and wrote them off), Korean restaurants in the US generally have ZERO vegetarian items on the menu, save for maybe a veggie Bee-Bim Bop and even that might be ruined by addition of a kimchi that includes fish oil (restaurants almost never indicate if their kimchi is vegetarian or not; at least in stores you can read the ingredients list).
Don't mistake me, I love tofu, but your kimchi stew seems so delicious, I think I would probably add soy beans in it instead. Korean culture did so much for veganism. I'm glad to learn how to cook some meals from you.

Kimchi, gochujang…It’s so high in salt, so be careful if you’re salt sensitive.
