    Open that 1st chicken up and put seasonings inside it and under the skin and let it sit overnight. Matter of fact, mix the seasonings together with chopped onions, scallion, thyme, basil, and garlic. Coat the thing with it. Season the other side of the bird too.

    These recipes look fantastic. I never thought of using a bundt pan like that. What a smart idea!!! Is there anything you would suggest doing differently if you plan on removing the skin from the chicken before cooking?

    this is why so many professionals recommend to use a solid roasting tin that can take direct heat so they can make their gravy straight in the tin saving some washing up 🙂
