My favourite noodle recipe is a special dish only available in Bari in southern italy called Spaghtetti All'Assassina, which is naturally vegan. You put chopped chilli and garlic in a pan and add your sugo after they have turned fragrant. Then (and that is unusual for italian pasta recipes) you add the uncooked spaghetti directly into the sauce. You will need to prepare a broth out of hot water, salt and tomato paste to make the pasta cook through. And then there is the second special part – you actually need to burn the spaghetti for a real Al'Assassina – which makes the pasta slightly crispy.
