Love omelets and frittatas of all kinds but Chef Pepins small curd soft French omelet is my favorite. Also love the Cocotte egg dishes that we sometimes bake in the oven (Shire) instead of hot water.
When I was a kid, there was a fishmonger near my house. I would go with my mom when she bought her fish, and I was always fascinated by the look of the smoked whole fish he had. If I knew then what I know now, I would have helped keep that guy in business, even though I was like 5 or 6 at the time.
