If you have been looking for an easy and tasty banana bread muffin recipe, look no further! These healthy banana bread muffins are light, moist and insanely …
I think 1/4 c coconut sugar is plenty when the bananas are that ripe. I don’t like overly sweet cakes or muffins. Btw 14 oz came out to five bananas by me.
I made these with 1/2 cup gluten free flour, 1/2 cup oat flour and 1/2tsp of guar gum. Kept the rest of the recipe as it is. I did cut back on the sugar to 1/2 cups. The muffins turned out absolutely lovely! I found a keeper. Thank you!
Just done them this afternoon and IT’S DELICIOUS!!!!! Easy recipe and yummy! I added some chocolate chips on some and it’s been yummy too ! Thank you for this recipe!!!

Great flavors but mine were undercooked as i used more bananas and should bake them longer. Will definitely be baking them again and it will be perfect next time 😄
Tried this recipe with all purpose flour and reducing the sugar to 1/2 cup and adding 1 tbsp of baking powder, it's really good 🤤 thank you for turning it into a muffin as it's so much easier to freeze it or to divide the portion ❤️
I always freeze older bananas and when I get enough, I make large batches of banana bread. Freezing also gives you a completely brown, extremely soft banana that maintains all those excellent nutrients that they lose, other than potassium, the longer they are out on the counter. On another note, if you want to freeze bananas and avoid the oxidation process make sure they have an air-tight seal
Haven't even tried the banana bread yet, but these look good too!
