The whole "don't wash mushrooms, they get waterlogged" thing is a myth. Giving them a quick rinse and patting them dry makes no discernable difference to the texture, according to J Kenji Lopez-Alt. Just don't soak them in water for a length of time.
The look great! My father make these and uses bread crumbs, crab, spinach, onion, celery, spices and herbs. But crab and cheese don't tickle my fancy.
