    Chef Billy … Can I ask? I see you blanched the broccoli and carrots at 6:16, and I understand you used that to make them softer. But, why didn't you SHOCK THEM with ice cold water after you finished the blanching? Usually Chinese people (I think) blanch B & C first (let's say), then shock it and add it at the end. Won't it still keep cooking after it is put onto the dish, or maybe, it just starts cooling down. I am not a Chef, so maybe you could explain if you have any thoughts. However, I loved your simple recipe, because we sure learned how to do it quick by watching you.

    I wouldn't add the egg to the beef. I cooked it and it turned into scrambled egg mash and beef. Couldn't cook the beef without obliterating the egg, ruined the dish. The beef you poured in didn't even look like you put an egg it looks dry. I'm going to stick to frying dry meat.
