    I’ve made this before but mixed the olive oil, lime juice, garlic, cilantro and splash of apple cider vinegar before adding it, also added the the avocado last after an initial mix to prevent it getting mashed. Opted for cherry tomatoes cut in half as well, and it was a crowd pleaser.

    If you charr the corn in a dry pan first as well as soak the red onion in cold water before adding, it's even better. Great recipe

    that little juicer thingy is so cute! this salad looks so good. I was just diagnosed T2d so Im just learning whats ok to eat. I had a mini stroke in Nov, of last year its been a roller coaster ride thats for sure. i want to ear well, but still eat healthy. ❤️

    I made a slightly different dressing: juice of 1 lime, 2 tsp rice vinegar, 2 tsp canola oil, 2 tsp cumin, 1 tsp coriander, 2 tsp sugar, 1/2 tsp salt, 2 tbsp Tabasco, 1 clove minced garlic. Really delicious. Of course you can adjust the amount of Tabasco.
