Just wanted to post that I tried this, cooked in some tomatoes and yellow onions with the mushrooms and then added it to the eggs as you instructed. it was delicious.

I didn’t throw away stalks either.
Tried this and doubled the amount of ingredients. Also chopped up onions small and fried them in the oil for the mushrooms. Then when they where brown and soft cooked the mushrooms following recipe and it was gorgeous. Thank you. Best omelettes I’ve ever made.
