    I make 1 vegetarian meal a week for our families “meatless Monday”. These will work, don’t know it they’ll be vegan but they will be vegetarian.

    I’ve made several of these recipes. One tip I’d say is not to add the raw pasta directly into the pot of what you cooked. Boil the pasta in water first so it becomes a little bit tender, and then put it into the pot with the other fixings. It takes WAY too long for the pasta to cook without it being boiled first.
