Growing up Hispanic my family eats everything except liver it seems. I remember running around family bbq seeing cow head being cooked. Cabeza, Lengua tacos are so popular and still are even with the younger generations! I just never realized the nutrition it gave. My grandma was raised on a farm. She has the most amazing teeth in the world even at 83!
Kidneys have always been a challenge for me. I would love to see that and brain. I would also like to know how to source brain – it is very difficult because of laws!
Organ meats are making a comeback with the rising popularity of the carnivore diet. I started eating chicken liver with my eggs in the morning. I actually crave chicken liver. It just makes feel so good.
My chicken livers usually stick with the bitterness of the bile, idk how to wash it out, sometimes I have to dump the whole dish due to the bitterness. Beef heart smells so bad, even with strong spices, idk how to cook with it too. Please make recipes about 2 of these.

I cut it with scissors in small pieces, but when I froze them on the tray, they stuck to the tray and to each other. And it was so much work to cut them all. Maybe I should roll them into some herbal powder or something to prevent them getting stuck? Would you please, make a video about how you do it?
I tried raw beef with spices, olive oil and yolk, and it tasted very good -like saliami, but much healthier. Of course I used small farmer pastured beef. And had a piece of lemon just in case. Now have to get the courage to try raw liver. It is amazing how easy it is to digest raw eggs.

Which tubes to remove & the best way to remove them, what the yellow bits are around the liver, do kidneys always smell a bit like pee & is it normal etc. I’ve worked out what I know through trial & error as I’ve never had anyone to show me (my family didn’t eat much meat growing up) but maybe I’m missing a trick or two?🙂
In my country it's really popular to eat chicken/pork liver pate on a slice of homemade bread with fermented pickles. I really love the taste of it 🙂 Also I love medium raw chicken livers shortly fried on a pan with bell pepper, onion & white wine. Another dish I discovered is just duck stomach stew with boletus (or any kind of mushroom). Yum. All my life I was a non-meat fan. Eventually I was forcing myself to eat some chicken breasts or my moms beef slips but that's all. I hated the taste of organ meats. The clue was to grow enough, move out from my parents, study in a different city, start feeling bad, discover that I have Hashimoto and then step by step start to cook meat meals with organs. It was a trial & error method but I finally found a way to love the taste of organ meats in my daily life 🙂 I'm really curious of your heart kebabs & beef kidneys ( doesn't it smell like urine? ).
Ps. Oh I forgot – many people in my country eat fried pork brain with scrambled eggs. But I have never tasted it – probably because it's my limit of animal parts 😛
