I meal prep with a recipie almost identical to this one. Differences are: I do half chik peas half blackbeans Corn Red quinoa Sweet onion Fresh cilantro Yellow, red and green bell pepeprs Fetta cheese For dressing I just use lemon juice, pepper, and a bit of garlic salt. I eat it with pita crackers, tortilla chips, or I wrap it into lettuce with some grilled chicken.
Pumpkin can also be added
Can't afford and i don't do salads anyway
But the vinegar won’t affect the vegetables if I kept it for next day ?

Made this tonight and it was real good. Didn't have red cabbage so subbed green cabbage and used sugar in place of the honey. It turned out great!
