Eh I’d say the amount of acidic bases he’s adding to this will give anyone heartburn of the century. He can basically reduce it all from the begging. He’s proposing a dried meat type dish with a curry but it turns out more to be a “witches soup” just a bunch of tossed ingredients and next to stomach smoothie dish.

I tried this, you could probably go with tomato puree, unless you want chunks of tomato in the curry. I would recommend blending the curry before you put in the chicken as the onions and tomatoes do not dissolve into the curry otherwise
If we use science, the best marinade will have several drops of liquid soy seasoning, 1.5 tsp of seasoning salt, 1 tsp of brown sugar followed by Indian spices such as 1.5 tsp of garam masala, 1/2 tsp mild curry powder, 1 tsp tandoori masala and 2 over-heaping tbsp of yogurt.
If we use science, the best ingredients to make the sauce are: Fried Sweet onion: 1 Fried Sweet Potato: 1 Oven Roasted Red Pepper: 1 400ML of Cup of Tomato Sauce (already cooked and has necessary base sugar/salt for sauce) 200ML of Whipping Cream 2 TSBP high temperature oil such as peanut. 3 TBSP flour 1/4 cup butter 1.5 TBSP Ginger Paste 1.5 TBSP Garlic Paste 2 tsp (8g) Hungarian or Smoked paprika 2 tsp (9g) ground cumin 1 Tbsp (14g) garam masala 1-2 stem of curry leaves (left on stem, later removed) Salt & Pepper
What you have there is a full-proof recipe. Just nuke the sweet potato for 3 min before you fry it with the onions. When you add the tomato sauce, add curry leaves; simmer on super low covered 10 min. And before you reintroduce chicken to sauce, reserve half the onions and most of the red pepper and sweet potato and use hand blender till silky. This is the way.
Doubled this, OH MY GOD. Wowie. Hit the clean plate club and became an instant favorite which is wonderful cause MAN this took a while to make. Absolutely worth it, AND cheaper than ordering Curry that'll only last the night. Sir, thank you.

Made this recipe. Cost me nearly $50. Granted I now have leftover tumeric, and other spices, but.. it's not a cheap meal by any standpoint. 10/10 would recommend just buying it from your local Indian restaurant.. unless you're trying to impress someone then go for it!

Not trying to troll or being an asshat here, but just a fair warning for people not living in the USA: 6.5 grams of garam masala cost about $0.70 here where I am (which is Japan) at the moment (current $ to ¥ conversion), so 15 grams are more like $1.61 than $0.13. That is a huge difference. Also chicken thighs are about $1.50 per 100 grams and 1 1/2 pound are about 700 grams, which is $10.50. Chicken breasts can be a lot cheaper(!), like 100 grams for $0.35 at the cheapest I have seen, so that would be about $2.50. Soooooo, not as cheap as the video makes it out to be in my country where I am watching this from. But yeah, that's a thing to keep in mind when evaluating cooking videos like this. Anyway, everything else in this recipe as a whole is pretty awesome. I will give give it a try for sure regardless of the price differences, because I am actually really, really, REALLY fucking hungry for some good Indian style butter chicken curry. 😂

Kinda combined this with his Tikka Masala recipe. Added a blended Fresno chili and ginger to the yogurt marinade and it turned out incredibly

no you can't use veg oil that's cheating, you need to use clarified butter, otherwise you can't call it butter chicken
