I literally couldn't look at or touch mushrooms before going vegan. I tried different lentil loaves and bean balls that used mushrooms but they were hidden in the final product. I've made my favorite bean balls that use 10oz mushrooms per batch (I usually do 2 at a time because they freeze well) so many times. Over time I have become more comfortable handling and preparing mushrooms. A fancy restaurant in Marfa Texas accommodated us when we visited for my birthday and I tried trumpet mushrooms for the first time (and they didn't have to be chopped up and hidden in food). I think I may finally be ready to try this out and I feel my husband would love it.
Oh my goodness… I made this and it's the first time a dish tastes this good despite me messing up the timing. It's delicious. Highly recommend! If you're a beginner cook I would suggest chopping and measuring out all ingredients before starting (rather than trying to follow along with the video).
I am super intrigued by this recipe, however, as someone who grew up with their Russian/Ukrainian parents making this somewhat regularly, I am worried about the coconut milk…can you detect the coconut flavor in the final dish? I might go ahead and make this anyway and sub cashew cream but still.

Stroganoff has got to be the tastiest mushroom dish! I made it for my ex's kids once and they loved it. I'd have never eaten mushrooms as a kid but love them now.
My respect for mushrooms only formed when I tried them on something other than pizza. Same story with pineapple and olives. I'll steer clear of anchovies until I have to, but these experiences do lens some hope 👍

Steinsopp, apparently known as porcini or cep, is amazing when fried. Wiki says they're all over most the northern hemisphere
