When I prepare my raw vegan or semi cooked vegan meals, it looks a lot like your meal prep. And sometimes it looks a bit Ukrainian and Armenian, without the eggs or cow. 🐮🚫 🥚🥚🍳🥚🥚❌
They always look healthy and often very Israeli. 🥰 🇮🇱

The potatoes, olive oil and Celtic sea salt in the air fryer looks like a winner I hafta try. Toppings? Cherry tomatoes like you did, or other watery topping and avocado. It would make a nice and occasional heavy meal. Maybe some chopped cucumber or cashew /tahini dressing.
I also love raw spaghetti squash with tomatoes and habaneros. 🤤
I also use mono meals, as needed. Eating 7 bananas in one afternoon and a half of a small watermelon or 2 cups of brown rice for an early dinner is a breeze for me.

I am transitioning from a vegetarian to a vegan diet. But, l was surprised to hear that you use a microwave oven.
we love airfried potatoes! I use "slap yo mama", nutritional yeast,and great value soul food seasoning. topped with butter and green onions.
